Sensory notes
Bright straw yellow with fine greenish highlights.
On the nose it offers hints of apple, wild flowers, dried hay and almond drupes.
It is an excellent easy-drinking wine that has great balance and a mineral edge. The pleasingly long finish is warm and and enveloping.
Pairings
It is a classic choice to complement cold appetizers. Traditionally paired with San Daniele prosciutto, it also goes well with cold cuts, fresh cheeses, fish, and white meat dishes.
Winemaking
The grapes are softly pressed after a light
skin maceration of about 12 hours at a controlled temperature.
The must obtained is statically decanted
in cold. Subsequently the alcoholic fermentation is carried out and the subsequent continuous maturation always in steel tanks at controlled
temperature with periodic battonage.
