Sensory notes
It has a delicate pink color and in the aging phase slightly tends to salmon. In the classic “flute”, the persistent bubbles rise regularly to the surface. The nose reveals bewitching aromas of small underwood fruits well blended with elegant notes of yeast. Thus it reveals a fine, yet powerful character at the same time. On the palate it opens to an aristocratic mousse in perfect symbiosis with the final olfactory picture.
The finish is definitely fresh and inviting.
Pairings
It is excellent as an aperitif: fresh and defatigante at the end of the day. A “bubble” ideal also “throughout the meal” to accompany summer dishes based on fish, especially crustaceans, molluscs and seafood salads. Very pleasant also with salads and cold pastas.
Winemaking
Charmat method sparkling wine, it is vinified soft pink at a controlled temperature, with very soft pressing of the grapes. Refermentation in autoclave with periodic remouage and aging on the lees for about 4 months.
